• 600g Le 5 Stagioni Superior Flour
• 430g Filtered water (Room temperature)
• 4g Instant Yeast
• 5g Coarse Seasalt
• 20g Extra Virgin Olive Oil
• Sun dried tomatoes
• Sliced Olives (Black/Green)
• Fresh Rosemary
• Flaky Seasalt
• Coarse Black Pepper
• Chilli Flakes
• Extra Virgin Olive Oil
1. Activate the Yeast
Dissolve instant yeast in water and stir until fully combined. Add olive oil to the mixture and set aside.
2. Prepare the Dry Ingredients
Sift flour into a mixing bowl and add salt. Attach a dough hook to your stand mixer and mix the dry ingredients on low speed for 15 seconds. Gradually pour in the yeast and water mixture, then increase the speed to medium.
3. Knead the Dough
Mix for approximately 10 minutes, or until the dough comes together, pulling away cleanly from the sides of the mixing bowl.
4. Ferment the Dough
Generously coat a large bowl with olive oil. Transfer the dough into the bowl, ensuring it is well-oiled to prevent sticking. Cover tightly with cling wrap and refrigerate. Let the dough ferment for 1 to 2 days to enhance its flavor and texture.
5. Preheat the Oven
When ready to bake, preheat your oven to 200°C (392°F).
6. Prepare the Baking Pan
Coat a baking pan thoroughly with olive oil, ensuring the bottom and sides are well covered to prevent the dough from sticking.
7. Shape and Bake
Carefully transfer the dough onto the prepared baking pan, taking care not to deflate it. Proceed with your toppings and bake until golden and crisp!
8. Shape and Proof the Dough
Gently press and dimple the dough using your fingertips to fit the shape of the baking pan. Cover with a warm, damp towel and let the dough rise for 60-90 minutes, or until it doubles in size.
9. Add Your Favorite Toppings
Customize your focaccia with toppings of your choice! For a classic flavor, try chopped sun-dried tomatoes, sliced olives, fresh rosemary, flaky sea salt, black pepper, and a sprinkle of chili flakes. Finish with a generous drizzle of extra virgin olive oil to enhance the flavor.
10. Bake to Perfection
Preheat your oven to 200°C (392°F) and bake the focaccia for 20-30 minutes, or until the top turns golden brown and crispy.
11. Cool and Serve
Transfer the baked focaccia to a wire rack to cool slightly. Serve warm with olive oil and balsamic vinegar for dipping, or get creative by slicing the bread in half and filling it with your favorite ingredients for a delicious focaccia sandwich.
