Discovered over 8000 years ago, it is possibly one of the few foods on this earth that is remarkably varied in styles and textures, complex in flavours and aroma, yet primarily made of 3 simple ingredients: milk, enzymes and salt. If you haven’t figured it straightaway, you’re probably from a different planet, now say “Cheese” multiple times ’til Daisy, the cow, comes home.

 

 

With the resurgence of specialty cheese in the gastronomic landscape, it is imperative to feed the growing food trend in Asia, and we’ve concluded that America is at the forefront of innovation despite its relatively young but distinguished provenance in artisan cheese-making.

Partnering with the U.S. Dairy Export Council (USDEC), an independent membership organization that represents the global trade interests of U.S. dairy producers, to host a one-day cheese workshop on 17th Sept, presented by Guest Chef Sandro Fablo and USDEC Consultant Chef, Vindex Tengker; we were delighted to be a returning official sponsor for Lavazza Coffee &  Food for Friends’ cheeses like cheddar, Monterey Jack, Colby Jack, Pepper Jack and mozzarella in different formats from sliced, shredded to block, that gave many of the invited trade partners and chefs to savour popular melting cheeses for dishes like nachos, burgers, pizza, baked pasta and rice which are perennial favourites among the local diners in Singapore.

 

 

The pièce de résistance was a special 4-course luncheon menu designed by Sandro, who had helmed the kitchens of prestigious restaurant and luxury hotels around the world, replete the guests with each dish cooked with unique cheeses, one of it being a crispy Cannelloni filled with BellaVitano’s (Wisconsin) cheese soaked in Merlot. To build on the theme of creative applications of specialty U.S cheeses, Vindex, a celebrated chef and cookbook author, conducted a workshop on the various usage of farmstead cheeses to the passionate audiences from different culinary backgrounds.

 

The positive responses from the participants is a testament to the many successful initiatives organized by the USDEC, and we will continue to champion our love for U.S. cheeses to everyone!
