Cuitlacoche (Huitlacoche) – this Mexican delicacy is a type of fungus/mushroom that grows on cobs of corn. Cuitlacoche is a used in Mexico as a filling for quesadillas, tamales and other tortilla based dishes as well as an ingredient in soups and stews. Try it in a corn & zucchini omlet, Tacos, Chicken Breast stuffed with huitlacoche, pasta with a huitlacoche sauce, Crepes with huitlacoche stuffing and white sauce. Huitlacoche is also called Mexican truffles.
