The “Fior di Latte” Mozzarella is an absolutely Italian product made exclusively with 100% Molise milk. It is a type of fresh stretched curd cheese, produced with whole cow’s milk with the same technique used for buffalo mozzarella. It has no rind but covered with a thin, smooth and shiny, milky white film. It tastes creamy and milky with a sour hint. To make an excellent Fior di latte, the milk must be processed as soon as it is milked and Rio Freddo springs water used for processing is under a controlled temperature environment with filtered, sterilized healthy air.
